Preheat the oven to 350°F and prepare a loaf pan by coating it with non-stick spray and lining it with parchment paper.
In an electric mixer, beat the eggs and sugar on high speed for about 2 minutes or until creamy.
Gradually add the melted vegan butter, almond milk, and vanilla extract, mixing until combined.
Add the almond flour, salt, baking powder, and baking soda, and mix until just combined.
Fold in the diced apples.
Pour about 2/3 of the batter into the prepared loaf pan, then sprinkle 2/3 of the cinnamon and sugar mixture over it. Repeat with the remaining batter and cinnamon-sugar mixture.
Using a knife or toothpick, make zig-zag motions to mix the cinnamon and sugar on top.
Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before slicing.
