Gigantic Chocolate Chunk Granola Clusters

Ingredients

  • 3 cups rolled oats
  • 3/4 cup slivered almonds
  • 1/4 cup chia seeds
  • 1/4 cup pecans
  • 1/4 cup hemp hearts
  • 1/4 cup sesame seeds
  • 1/4 cup coconut sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 1/2 cup maple syrup
  • 1/2 cup melted coconut oil
  • 1 cup chocolate chips I used a whole bag of Hu Kitchen Gems!

Instructions

  • Preheat your oven to 325°F.
  • Line a standard-sized baking sheet with parchment paper.
  • In a bowl, mix together all the ingredients for the granola, saving the chocolate chips for last.
  • Transfer the granola to the baking sheet and press it down firmly with a rubber spatula or the back of a spoon to form clusters.
  • Bake for 22 minutes, flipping the pan around halfway through to ensure even cooking.
  • Once done, remove the granola from the oven and let it cool completely. This step is crucial for getting perfect clusters!
  • Once cooled, break the granola into chunks and enjoy!
