Ingredients
  

**Tartar Sauce:**

  • 1 cup mayonnaise
  • 1/4 cup dill relish
  • 1 tablespoon lemon juice
  • 1 tablespoon finely chopped parsley
  • 3/4 teaspoon sugar
  • 1 teaspoon mustard
  • 1 teaspoon dill
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper

**Flour Breading:**

  • 3/4 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder

**Egg Batter:**

  • 2 large eggs beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon black pepper

**Panko Breading:**

  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon black pepper

**For Assembly:**

  • 4 white fish fillets
  • 4 slices American cheese
  • 4 brioche buns toasted with butter
  • Butter for toasting
  • Optional lettuce
  • Vegetable oil for frying

**Making the Tartar Sauce:**

  • Combine mayo, dill relish, lemon juice, parsley, sugar, mustard, dill, onion powder, red pepper flakes, and black pepper in a bowl. Mix until smooth and thick.

**Preparing the Breading:**

  • In one bowl, mix all-purpose flour, salt, black pepper, and chili powder.
  • In another bowl, whisk together eggs, salt, chili powder, and black pepper.
  • Blend panko breadcrumbs, salt, chili powder, and black pepper until sandy. Transfer to a bowl.
  • Dip each fish fillet in flour, then egg, and finally coat with panko mix, using separate hands for dry and wet.

**Frying and Assembling:**

  • Heat vegetable oil to 325°F.
  • Carefully fry fillets for 8 to 9 minutes until golden and cooked through.
  • Drain excess oil on a wire rack, then top each fillet with American cheese.
  • On toasted buns, assemble fish, cheese, tartar sauce, and lettuce if desired.
  • Close sandwiches and savor every bite!
