Description

This Famous La Scala Chopped Salad is a crisp, flavorful Italian-style salad with shredded lettuce, chickpeas, salami, mozzarella, and a tangy Pecorino dressing. It is easy to assemble, satisfying as a main dish, and perfect for serving with dinner or meal prepping ahead.

For the dressing

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 3 teaspoons Dijon mustard, or 1 teaspoon dry mustard
  • 1/2 teaspoon kosher salt, plus black pepper to taste
  • 1/3 cup grated Pecorino Romano cheese, or grated parmesan cheese

For the salad

 

  • 1 head iceberg lettuce, shredded, about 5 to 6 cups
  • 1 head romaine lettuce, shredded, about 4 to 5 cups
  • 1 can chickpeas, 15 ounces, drained and rinsed
  • 4 ounces Italian salami, thinly sliced
  • 2 cups shredded mozzarella cheese


Instructions

  1. In a small bowl or jar, combine the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, pepper, and Pecorino Romano. Whisk until the dressing looks smooth and well blended, or seal the jar tightly and shake until everything emulsifies.
  2. In a large serving bowl, add the shredded iceberg lettuce, shredded romaine lettuce, chickpeas, Italian salami, and mozzarella cheese.
  3. Pour the dressing over the salad ingredients. Toss thoroughly until everything is evenly coated and the dressing reaches all parts of the bowl.
  4. Serve the salad immediately for the freshest crunch and best texture. If you are not serving right away, keep the dressing separate and toss just before eating. Leftovers will keep in the refrigerator for 1 to 2 days, though the lettuce will soften over time.
