Ingredients

  • 2 cups 4-6 small Roma tomatoes, chopped
  • 2 cups Persian cucumbers (chopped*)
  • 1 small red onion (chopped)
  • 1/4 cup fresh parsley (chopped)
  • 3 tablespoons fresh mint (chopped)
  • 3 tablespoons olive oil
  • Juice of 1 lime
  • 1 teaspoon sumac
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


Instructions

  1. In a big bowl, mix together the chopped tomatoes, Persian cucumbers, red onion, parsley, and mint.
  2. In a small separate bowl, whisk up the olive oil, lime juice, sumac, salt, and pepper.
  3. Pour this delightful dressing over the salad ingredients in the big bowl.
  4. Gently toss all the ingredients until they’re beautifully coated with the dressing.
  5. Taste it and add more seasonings if needed.
  6. Let the salad chill for about 10-15 minutes to let the flavors blend together.
  7. Serve this cool Shirazi Salad as a refreshing side dish or with grilled meats or kebabs.
  8. Keep any leftovers in a sealed container in the fridge for up to 3-4 days. Remember: the longer it sits, the softer the veggies become.

Notes

*If you can’t find Persian cucumbers, feel free to use English cucumbers instead.
