Get ready for a delightful Shirazi Salad that brings together crunchy cucumbers, juicy tomatoes, and fresh herbs, all coated in a zesty olive oil dressing. This salad, without any lettuce, is a perfect partner for any main course!

Easy Shirazi Salad

Ingredients
  

  • 2 cups 4-6 small Roma tomatoes, chopped
  • 2 cups Persian cucumbers chopped*
  • 1 small red onion chopped
  • 1/4 cup fresh parsley chopped
  • 3 tablespoons fresh mint chopped
  • 3 tablespoons olive oil
  • Juice of 1 lime
  • 1 teaspoon sumac
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • In a big bowl, mix together the chopped tomatoes, Persian cucumbers, red onion, parsley, and mint.
  • In a small separate bowl, whisk up the olive oil, lime juice, sumac, salt, and pepper.
  • Pour this delightful dressing over the salad ingredients in the big bowl.
  • Gently toss all the ingredients until they’re beautifully coated with the dressing.
  • Taste it and add more seasonings if needed.
  • Let the salad chill for about 10-15 minutes to let the flavors blend together.
  • Serve this cool Shirazi Salad as a refreshing side dish or with grilled meats or kebabs.
  • Keep any leftovers in a sealed container in the fridge for up to 3-4 days. Remember: the longer it sits, the softer the veggies become.

Notes

*If you can’t find Persian cucumbers, feel free to use English cucumbers instead.
