Ingredients
  

  • 1 pound boneless skinless chicken breast
  • 1 cup fresh mint leaves
  • 1 small bunch flat-leaf Italian parsley
  • 2 small shallots
  • 2 garlic cloves
  • 1 large egg
  • ¼ cup dried breadcrumbs
  • 2 tablespoons shawarma spice see notes below for a homemade option
  • 1 teaspoon salt adjust if your shawarma spice contains salt

Instructions
 

  • Toss the chicken breast into the food processor and grind until it’s finely minced.
  • Add fresh mint, parsley, shallots, garlic, egg, breadcrumbs, shawarma spice, and salt to the processor. Pulse until everything is well mixed.
  • Use a small ice cream scoop to shape the mixture into two-tablespoon-sized balls.
  • Preheat your air fryer to 350 degrees Fahrenheit, and lightly grease the basket with cooking oil spray or a bit of olive oil.
  • Place the chicken kofta balls in the air fryer, ensuring some space between each. Air fry for 13-15 minutes or until they reach an internal temperature of 165 degrees Fahrenheit.
  • Store your scrumptious creations in an airtight container in the fridge for up to five days.

Notes

  • Feel free to use store-bought shawarma spice, or create your own blend with garlic powder, coriander, cumin, smoked paprika, cardamom, turmeric, black pepper, cinnamon, ginger, allspice, cloves, and cayenne pepper (optional).
  • Adjust the salt if your shawarma spice already contains some.
  • Prefer using an oven? Shape the kofta, place them on a greased baking sheet, and bake at 375 degrees Fahrenheit for 18-20 minutes, flipping halfway.
  • To freeze, stash the kofta balls in an airtight container or sealable bag for up to three months. Thaw in the fridge overnight and cook as usual, or warm them in the air fryer at 350 degrees until heated through. Enjoy!
