In the U.S., we call these delights POPOVERS! Across the pond in the UK, they go by Yorkshire puddings, though there’s a slight twist. Yorkshire puddings often savor the drippings from a roast dinner, giving them a savory kick, while popovers are made with butter.

I remember eagerly awaiting lunchtime at Neiman Marcus with my mom. Why? Because every meal started with a warm, fluffy popover served with butter and jam—truly the best part of the whole experience. If you’ve never tried one, imagine a pastry with a crispy outside and a soft, buttery inside. Trust me, they’re amazing!

And guess what? You don’t even need a special popover tin to make them; your trusty muffin tin will do just fine!

Here’s what you need to make 12 popovers:

Ingredients
  

  • 3 eggs at room temperature
  • 1 2/3 cups of milk slightly warm, 30 seconds in the microwave will do
  • 1 2/3 cups of bread flour or all-purpose flour
  • 1 tsp of kosher salt
  • 1 tsp of baking powder
  • 1/4 cup of unsalted butter melted

Instructions
 

  • Now, let’s get baking! Preheat your oven to 425 degrees F. In a blender, mix together the eggs, milk, flour, salt, and baking powder until smooth. Then, add the melted butter and blend again until combined. The batter should be thin.
  • Grease your muffin tin and divide the batter evenly among all 12 cups, filling them a little over halfway. Bake for 20 minutes. After that, reduce the heat to 350 degrees F and bake for another 10 minutes without opening the oven door.
  • For that extra golden touch on top, you can turn on the broiler for just 1 minute. Once they’re done, take them out of the oven and enjoy these delicious popovers!
