Crispy Parmesan Roasted Potatoes

Ingredients

  • 2 pounds baby gold potatoes rinsed and halved
  • 1/2 cup grated parmesan cheese

**Garlic and Herb Sauce:**

  • 1/4 cup unsalted butter melted
  • 1/4 cup olive oil
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon finely minced garlic
  • 3 tablespoons grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes

Instructions

**Make the Garlic Butter:**

  • In a small bowl, mix together the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Set aside.

**Prepare the Potatoes and Bake:**

  • Preheat the oven to 400°F.
  • Rinse the potatoes thoroughly and halve each one. Place them in a bowl.
  • Toss the potatoes in the garlic and herb butter until well combined.
  • Place the grated parmesan cheese in a bowl. Dip each potato, ensuring the flat side without skin is coated in parmesan. Press down to help the parmesan stick, then transfer to a non-stick tray. Repeat for all potatoes.
  • Bake in the oven for 30 to 40 minutes until the bottoms are golden brown and crispy, and the centers are soft and fluffy.
  • Remove from the oven and serve with your favorite dipping sauce!
