Crispy Parmesan Roasted Potatoes

Ingredients
- 2 pounds baby gold potatoes rinsed and halved
- 1/2 cup grated parmesan cheese
**Garlic and Herb Sauce:**
- 1/4 cup unsalted butter melted
- 1/4 cup olive oil
- 2 tablespoons finely chopped parsley
- 1 tablespoon finely minced garlic
- 3 tablespoons grated parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
Instructions
**Make the Garlic Butter:**
- In a small bowl, mix together the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Set aside.
**Prepare the Potatoes and Bake:**
- Preheat the oven to 400°F.
- Rinse the potatoes thoroughly and halve each one. Place them in a bowl.
- Toss the potatoes in the garlic and herb butter until well combined.
- Place the grated parmesan cheese in a bowl. Dip each potato, ensuring the flat side without skin is coated in parmesan. Press down to help the parmesan stick, then transfer to a non-stick tray. Repeat for all potatoes.
- Bake in the oven for 30 to 40 minutes until the bottoms are golden brown and crispy, and the centers are soft and fluffy.
- Remove from the oven and serve with your favorite dipping sauce!
