Preheat the oven to 400°F.
Rinse the potatoes thoroughly and halve each one. Place them in a bowl.
Toss the potatoes in the garlic and herb butter until well combined.
Place the grated parmesan cheese in a bowl. Dip each potato, ensuring the flat side without skin is coated in parmesan. Press down to help the parmesan stick, then transfer to a non-stick tray. Repeat for all potatoes.
Bake in the oven for 30 to 40 minutes until the bottoms are golden brown and crispy, and the centers are soft and fluffy.
Remove from the oven and serve with your favorite dipping sauce!
