Crispy Fried Feta Egg Tortilla

Ingredients
- 2 tsp extra virgin olive oil
- 1/4 cup crumbled feta cheese
- 1 egg
- 2 tsp chili oil crunch
- 1/2 ripe avocado smashed
- 1 tsp fresh lime juice
- Drizzle of honey
Instructions
- Heat a skillet over medium-low heat. Drizzle a small amount of extra virgin olive oil and carefully add the feta crumbles, shaping them into a circle with a hole in the center.
- Crack an egg into the center of the feta circle and drizzle with chili oil crunch.
- Cover and let the egg cook for 3-5 minutes.
- Meanwhile, toast a tortilla on the stovetop and spread smashed avocado on top, then squeeze fresh lime juice over it.
- Using a spatula, carefully remove the crispy fried egg from the skillet and place it on top of the avocado-covered tortilla.
- Drizzle with honey and enjoy!
Notes
- Pre-crumbled feta cheese works best.
- Grease the pan to prevent sticking, but be cautious of oil splatter when adding the feta crumbles.
- Add chili oil crunch while cooking for extra flavor.
