Crispy Fried Feta Egg Tortilla

Ingredients
  

  • 2 tsp extra virgin olive oil
  • 1/4 cup crumbled feta cheese
  • 1 egg
  • 2 tsp chili oil crunch
  • 1/2 ripe avocado smashed
  • 1 tsp fresh lime juice
  • Drizzle of honey

Instructions
 

  • Heat a skillet over medium-low heat. Drizzle a small amount of extra virgin olive oil and carefully add the feta crumbles, shaping them into a circle with a hole in the center.
  • Crack an egg into the center of the feta circle and drizzle with chili oil crunch.
  • Cover and let the egg cook for 3-5 minutes.
  • Meanwhile, toast a tortilla on the stovetop and spread smashed avocado on top, then squeeze fresh lime juice over it.
  • Using a spatula, carefully remove the crispy fried egg from the skillet and place it on top of the avocado-covered tortilla.
  • Drizzle with honey and enjoy!

Notes

  • Pre-crumbled feta cheese works best.
  • Grease the pan to prevent sticking, but be cautious of oil splatter when adding the feta crumbles.
  • Add chili oil crunch while cooking for extra flavor.
