- 2 tablespoons grated zucchini (squeeze out excess moisture)
- ½ cup rolled or quick oats (old fashioned oats work too!)
- 1/4 cup milk of your choice
- 1 egg or flax egg substitute
- ½ ripe banana
- 1 tablespoon maple syrup
- 1 scoop collagen peptides
- 1 tablespoon cashew or almond butter
- 1/4 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 3 tablespoons dairy-free chocolate chips
Instructions
- Preheat your oven to 350°F.
- Grease an oven-safe mug or 6-8 oz ramekin.
- Finely grate the zucchini and remove excess moisture with a paper towel.
- In a blender, combine all ingredients except the zucchini and chocolate chips, and blend until smooth.
- Pour the oat mixture into the mug or ramekin.
- Stir in the grated zucchini and chocolate chips.
- Bake for 25 minutes.
- Remove from the oven and add a splash of milk if desired. Enjoy your delicious baked oats!
