Chocolate Chip Zucchini Protein Baked Oats

Ingredients

  • 2 tablespoons grated zucchini squeeze out excess moisture
  • ½ cup rolled or quick oats old fashioned oats work too!
  • 1/4 cup milk of your choice
  • 1 egg or flax egg substitute
  • ½ ripe banana
  • 1 tablespoon maple syrup
  • 1 scoop collagen peptides
  • 1 tablespoon cashew or almond butter
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 3 tablespoons dairy-free chocolate chips

Instructions

  • Preheat your oven to 350°F.
  • Grease an oven-safe mug or 6-8 oz ramekin.
  • Finely grate the zucchini and remove excess moisture with a paper towel.
  • In a blender, combine all ingredients except the zucchini and chocolate chips, and blend until smooth.
  • Pour the oat mixture into the mug or ramekin.
  • Stir in the grated zucchini and chocolate chips.
  • Bake for 25 minutes.
  • Remove from the oven and add a splash of milk if desired. Enjoy your delicious baked oats!
