Chewy Tahini Cookies

Ingredients
Dry Ingredients
- 1.5 cups all-purpose flour
- ½ teaspoon kosher salt
- ½ teaspoon baking soda
Wet Ingredients
- 5 tablespoons unsalted butter at room temperature
- ¾ cup packed light brown sugar
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup drippy tahini
- 1 large egg
- 1-3 tablespoons water
Other Ingredients
- ¼ cup raw sesame seeds white, black, or a combination
Instructions
- Preheat your oven to 350ºF and line a baking sheet with parchment paper.
- In a bowl, whisk together all the dry ingredients and set aside.
- In a mixing bowl, use an electric mixer to beat the butter, brown sugar, maple syrup, and vanilla until light and fluffy.
- Add the tahini to the sugar mixture and mix until combined.
- Add the egg and mix well.
- Gradually add the dry ingredients to the wet mixture, mixing until well combined.
- If needed, add 1 tablespoon of water at a time until the dough is moldable.
- Roll heaping tablespoons of dough into balls, flatten slightly, and press one side into sesame seeds.
- Place the cookies on the prepared baking sheet and bake for 10-12 minutes until tender and golden brown.
- Once baked, transfer the cookies to a wire rack to cool completely.
Notes
- Use an electric mixer only for steps 3 and 4 to avoid crumbly dough.
- Overmixing may result in oily dough.
- For softer cookies, reduce the baking time. Enjoy your delicious tahini cookies!
