Chewy Tahini Cookies

Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking soda

Wet Ingredients

  • 5 tablespoons unsalted butter at room temperature
  • ¾ cup packed light brown sugar
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup drippy tahini
  • 1 large egg
  • 1-3 tablespoons water

Other Ingredients

  • ¼ cup raw sesame seeds white, black, or a combination

Instructions

  • Preheat your oven to 350ºF and line a baking sheet with parchment paper.
  • In a bowl, whisk together all the dry ingredients and set aside.
  • In a mixing bowl, use an electric mixer to beat the butter, brown sugar, maple syrup, and vanilla until light and fluffy.
  • Add the tahini to the sugar mixture and mix until combined.
  • Add the egg and mix well.
  • Gradually add the dry ingredients to the wet mixture, mixing until well combined.
  • If needed, add 1 tablespoon of water at a time until the dough is moldable.
  • Roll heaping tablespoons of dough into balls, flatten slightly, and press one side into sesame seeds.
  • Place the cookies on the prepared baking sheet and bake for 10-12 minutes until tender and golden brown.
  • Once baked, transfer the cookies to a wire rack to cool completely.

Notes

  • Use an electric mixer only for steps 3 and 4 to avoid crumbly dough.
  • Overmixing may result in oily dough.
  • For softer cookies, reduce the baking time. Enjoy your delicious tahini cookies!
