Dry Ingredients

  • 1.5 cups all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking soda

Wet Ingredients

  • 5 tablespoons unsalted butter (at room temperature)
  • ¾ cup packed light brown sugar
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup drippy tahini
  • 1 large egg
  • 13 tablespoons water

Other Ingredients

  • ¼ cup raw sesame seeds (white, black, or a combination)


Instructions

  1. Preheat your oven to 350ºF and line a baking sheet with parchment paper.
  2. In a bowl, whisk together all the dry ingredients and set aside.
  3. In a mixing bowl, use an electric mixer to beat the butter, brown sugar, maple syrup, and vanilla until light and fluffy.
  4. Add the tahini to the sugar mixture and mix until combined.
  5. Add the egg and mix well.
  6. Gradually add the dry ingredients to the wet mixture, mixing until well combined.
  7. If needed, add 1 tablespoon of water at a time until the dough is moldable.
  8. Roll heaping tablespoons of dough into balls, flatten slightly, and press one side into sesame seeds.
  9. Place the cookies on the prepared baking sheet and bake for 10-12 minutes until tender and golden brown.
  10. Once baked, transfer the cookies to a wire rack to cool completely.

Notes

  • Use an electric mixer only for steps 3 and 4 to avoid crumbly dough.
  • Overmixing may result in oily dough.
  • For softer cookies, reduce the baking time. Enjoy your delicious tahini cookies!
