Preheat your oven to 350ºF and line a baking sheet with parchment paper.
In a bowl, whisk together all the dry ingredients and set aside.
In a mixing bowl, use an electric mixer to beat the butter, brown sugar, maple syrup, and vanilla until light and fluffy.
Add the tahini to the sugar mixture and mix until combined.
Add the egg and mix well.
Gradually add the dry ingredients to the wet mixture, mixing until well combined.
If needed, add 1 tablespoon of water at a time until the dough is moldable.
Roll heaping tablespoons of dough into balls, flatten slightly, and press one side into sesame seeds.
Place the cookies on the prepared baking sheet and bake for 10-12 minutes until tender and golden brown.
Once baked, transfer the cookies to a wire rack to cool completely.
