Blended Overnight Oats

Ingredients
Cookie Dough Blended Oats
- 1/2 cup old-fashioned rolled oats
- 1 scoop plant-based protein powder about 1/4 cup
- 1 tbsp ground flaxseed
- 1 1/4 cups almond milk
- 1 tbsp cashew butter
- 1 tsp vanilla extract
- 1 tbsp dark chocolate chips
Frosting
- 3 tbsp coconut yogurt
- 1/4 cup dark chocolate chips melted
Instructions
- Blend oats, protein powder, ground flaxseed, almond milk, cashew butter, and vanilla extract until smooth and creamy, about 30-60 seconds.
- Transfer the batter to a bowl and mix in chocolate chips. Cover and refrigerate for at least 4 hours or freeze for 20 minutes to cool.
- Melt chocolate chips and mix with coconut yogurt. Spread this mixture over the blended oats and smooth out.
- Enjoy as is, or chill again in the fridge or freezer for a firmer texture. Serve and savor the deliciousness!
Notes
- For a colder treat, freeze blended oats for 20 minutes before adding frosting.
- Ensure oats are firm before adding frosting to prevent mixing. However, if aesthetics aren’t a concern, it’ll still taste fantastic!
