Apple Cinnamon Bread

Ingredients
Dry Ingredients:
- 1 cup shredded apples
- 1.5 cups white whole wheat flour
- ½ cup light brown sugar or coconut sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1 teaspoon baking soda
Wet Ingredients:
- 2 large eggs
- 1/2 cup maple syrup
- 1 cup unsweetened applesauce
- 1/2 cup plain unsweetened almond milk
- 1 teaspoon vanilla extract
- 2 tablespoons melted coconut oil
Instructions
- Preheat oven to 350ºF and grease a loaf pan with nonstick cooking spray.
- In a medium bowl, mix all dry ingredients until combined. Set aside.
- In another bowl, combine all wet ingredients (excluding coconut oil).
- Gradually add dry ingredients to wet ingredients and mix until smooth. Fold in melted coconut oil.
- Pour batter into the bread pan and sprinkle oats or nuts on top (we used oats). Bake for 40 minutes, then cover with foil and bake for another 20 minutes.
- Remove from oven and let cool for at least 30 minutes before slicing and enjoying!
Notes
- Avoid over-mixing the batter to prevent a flat loaf.
- Let the bread cool completely before slicing to avoid it falling apart.
- Use a toothpick to test doneness; if it comes out clean from the center, it’s ready!
