Apple Cinnamon Bread

Ingredients

Dry Ingredients:

  • 1 cup shredded apples
  • 1.5 cups white whole wheat flour
  • ½ cup light brown sugar or coconut sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda

Wet Ingredients:

  • 2 large eggs
  • 1/2 cup maple syrup
  • 1 cup unsweetened applesauce
  • 1/2 cup plain unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil

Instructions

  • Preheat oven to 350ºF and grease a loaf pan with nonstick cooking spray.
  • In a medium bowl, mix all dry ingredients until combined. Set aside.
  • In another bowl, combine all wet ingredients (excluding coconut oil).
  • Gradually add dry ingredients to wet ingredients and mix until smooth. Fold in melted coconut oil.
  • Pour batter into the bread pan and sprinkle oats or nuts on top (we used oats). Bake for 40 minutes, then cover with foil and bake for another 20 minutes.
  • Remove from oven and let cool for at least 30 minutes before slicing and enjoying!

Notes

  • Avoid over-mixing the batter to prevent a flat loaf.
  • Let the bread cool completely before slicing to avoid it falling apart.
  • Use a toothpick to test doneness; if it comes out clean from the center, it’s ready!
