Preheat oven to 350ºF and grease a loaf pan with nonstick cooking spray.
In a medium bowl, mix all dry ingredients until combined. Set aside.
In another bowl, combine all wet ingredients (excluding coconut oil).
Gradually add dry ingredients to wet ingredients and mix until smooth. Fold in melted coconut oil.
Pour batter into the bread pan and sprinkle oats or nuts on top (we used oats). Bake for 40 minutes, then cover with foil and bake for another 20 minutes.
Remove from oven and let cool for at least 30 minutes before slicing and enjoying!
