Ingredients

#### Apple Cake:

  • – 4 large apples (about 4 cups, peeled, cored, and diced into 1/2-inch cubes)
  • – 2 beaten eggs
  • – 1 teaspoon vanilla extract
  • – 1 1/4 cups sugar
  • – 2 teaspoons cinnamon
  • – 1 teaspoon cardamom
  • – 1/2 teaspoon ginger
  • – 1/2 cup melted butter
  • – 2 cups all-purpose flour
  • – 1 teaspoon salt
  • – 1 teaspoon baking soda

#### Crumble:

  • – 1 1/2 cups all-purpose flour
  • – 1/2 cup firmly packed light brown sugar
  • – 1/4 cup white sugar
  • – 1/2 teaspoon salt
  • – 1 stick (1/2 cup butter, melted)
  • – 1/2 teaspoon almond extract


Instructions

#### Brown Sugar Crumble:

  1. In a medium bowl, combine flour, brown sugar, white sugar, and salt.
  2. Pour in the melted butter and almond extract. Mix until large crumbs form. Set aside.

#### Apple Cake:

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix the diced apples with the vanilla and beaten eggs until combined.
  3. Add the sugar, cinnamon, cardamom, ginger, and melted butter. Stir until well mixed.
  4. Add the flour, salt, and baking soda. Stir until just combined.
  5. Grease a 9-inch cake pan and pour in the batter, spreading it evenly with a spatula.
  6. Top the batter with the prepared crumble.
  7. Bake for 60-80 minutes, or until a toothpick inserted into the center comes out clean. Start checking at around 55 minutes, as baking times may vary by oven.
