Ingredients
  

#### Apple Cake:

  • – 4 large apples about 4 cups, peeled, cored, and diced into 1/2-inch cubes
  • – 2 beaten eggs
  • – 1 teaspoon vanilla extract
  • – 1 1/4 cups sugar
  • – 2 teaspoons cinnamon
  • – 1 teaspoon cardamom
  • – 1/2 teaspoon ginger
  • – 1/2 cup melted butter
  • – 2 cups all-purpose flour
  • – 1 teaspoon salt
  • – 1 teaspoon baking soda

#### Crumble:

  • – 1 1/2 cups all-purpose flour
  • – 1/2 cup firmly packed light brown sugar
  • – 1/4 cup white sugar
  • – 1/2 teaspoon salt
  • – 1 stick 1/2 cup butter, melted
  • – 1/2 teaspoon almond extract

Instructions
 

#### Brown Sugar Crumble:

  • In a medium bowl, combine flour, brown sugar, white sugar, and salt.
  • Pour in the melted butter and almond extract. Mix until large crumbs form. Set aside.

#### Apple Cake:

  • Preheat the oven to 350°F.
  • In a large bowl, mix the diced apples with the vanilla and beaten eggs until combined.
  • Add the sugar, cinnamon, cardamom, ginger, and melted butter. Stir until well mixed.
  • Add the flour, salt, and baking soda. Stir until just combined.
  • Grease a 9-inch cake pan and pour in the batter, spreading it evenly with a spatula.
  • Top the batter with the prepared crumble.
  • Bake for 60-80 minutes, or until a toothpick inserted into the center comes out clean. Start checking at around 55 minutes, as baking times may vary by oven.
