Almond Energy Bars

Ingredients
- 1 cup old-fashioned rolled oats
- 1/2 cup raw almonds unsalted
- 2 tablespoons honey
- 1/2 cup creamy almond butter
- 3 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
- 1/4 cup M&Ms
- 1 tablespoon chia seeds optional
Instructions
- Turn oats and almonds into a flour-like consistency using a food processor.
- Add all other ingredients, excluding M&Ms and chocolate chips; pulse until well-combined.
- Gently mix in M&Ms and chocolate chips.
- Press the mixture into an 8×8 baking pan. Note: you can also roll them into balls for energy bites!
- Place in the fridge or freezer until set, then slice into bars.
Notes
For an extra boost, consider adding chia seeds and flax seeds!
