Almond Energy Bars

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup raw almonds unsalted
  • 2 tablespoons honey
  • 1/2 cup creamy almond butter
  • 3 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/4 cup M&Ms
  • 1 tablespoon chia seeds optional

Instructions

  • Turn oats and almonds into a flour-like consistency using a food processor.
  • Add all other ingredients, excluding M&Ms and chocolate chips; pulse until well-combined.
  • Gently mix in M&Ms and chocolate chips.
  • Press the mixture into an 8×8 baking pan. Note: you can also roll them into balls for energy bites!
  • Place in the fridge or freezer until set, then slice into bars.

Notes

For an extra boost, consider adding chia seeds and flax seeds!
