Hot Honey:

  • 1/2 cup honey (not raw honey)
  • 2 teaspoons red pepper flakes or 6 Thai chiles (minced with seeds)
  • 1/2 tablespoon apple cider vinegar
  • 1 garlic clove (sliced)

Chicken Poppers:

  • 1.5 lbs. boneless (skinless chicken breast)
  • 4 cups corn flakes
  • 1/4 cup all-purpose flour or 1:1 gluten-free
  • 2.5 teaspoons garlic powder
  • 2.5 teaspoons coarse salt
  • 1 teaspoon cracked black pepper
  • 1.5 teaspoons ground mustard
  • 1.5 teaspoons paprika
  • 3 large eggs
  • 1 tablespoon water
  • 34 tablespoons avocado oil or olive oil


Instructions

  1. Prepare the hot honey sauce by heating honey, red pepper flakes or chiles, apple cider vinegar, and garlic in a saucepan until gently boiling. Transfer to a jar and let it cool.
  2. Preheat the air fryer to 370-375ºF.
  3. Slice chicken into 1.5-2-inch pieces.
  4. In a food processor, pulse corn flakes, flour, and spices until breadcrumb consistency.
  5. Whisk eggs and water in a bowl. Dredge chicken in egg mixture, then cornflake mixture, repeating for a double coat.
  6. Spray air fryer basket, arrange chicken, drizzle with oil, and air fry for 8 minutes, flipping halfway.
  7. Toss cooked chicken in hot honey sauce, adding more if desired.
  8. Serve alone or with your favorite sides.
