Ingredients
  

Dry:

  • 1.5 cups rolled oats lightly crushed (or quick-cooking oats)
  • 1 cup white whole wheat flour
  • 1/2 teaspoon baking powder
  • 1.5 teaspoons ground cinnamon
  • Pinch of salt
  • 3/4 cup finely diced fresh apples + extra for topping ~1 medium gala apple

Wet:

  • 1 cup unsweetened applesauce
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 tablespoons melted coconut oil

Instructions
 

  • Preheat your oven to 350ºF and grease a baking sheet with nonstick spray.
  • In a large bowl, mix together the dry ingredients.
  • In a separate bowl, combine the wet ingredients (except the melted coconut oil). Then, add the wet mixture to the dry ingredients and mix well. Finally, stir in the melted coconut oil. Your batter should be thinner than regular cookie dough, more like thick oatmeal.
  • Use a 1.5 tablespoon cookie scoop to drop the batter onto the baking sheet. Flatten the cookies with your hands as they won’t spread much while baking. Add diced fresh apple on top if desired.
  • Bake at 350ºF for 12-16 minutes (depending on your oven) until the bottoms start to brown. Once done, transfer the cookies to a cooling rack immediately.
  • Just before serving, sprinkle the cookies with a dusting of ground cinnamon for extra flavor. Enjoy!
