High-Protein Peanut Butter & Strawberry Yogurt Bark

You all loved my favorite snack from law school—the honey granola yogurt bark—so much that I had to whip up another version for you, and let me tell you, it’s absolutely delicious! Bonus tip: this snack is perfect for kids too!

And for my vegan and plant-based pals, don’t worry, you can enjoy this treat too! Simply swap out the Greek yogurt for any plant-based yogurt and skip the collagen peptides!

High-Protein Peanut Butter & Strawberry Yogurt Bark

Course Snack

Ingredients

  • 3 cups Greek yogurt
  • 1/2 cup maple syrup
  • 3 scoops collagen peptides optional
  • 2 cups chopped strawberries plus extra for topping
  • 1/2 cup creamy peanut butter
  • 1 teaspoon melted coconut oil

Instructions

  • Start by mixing together the yogurt, maple syrup, collagen peptides (if using), and chopped strawberries in a bowl.
  • Spread this mixture onto a lined baking sheet.
  • Then, combine the peanut butter with melted coconut oil and spread it over the yogurt mixture.
  • Create swirls with the back of a knife or a toothpick.
  • Freeze for at least 8 hours or overnight. The next day, break it into pieces and enjoy!
  • Remember to store it in a covered container in the FREEZER!
