You all loved my favorite snack from law school—the honey granola yogurt bark—so much that I had to whip up another version for you, and let me tell you, it’s absolutely delicious! Bonus tip: this snack is perfect for kids too!
And for my vegan and plant-based pals, don’t worry, you can enjoy this treat too! Simply swap out the Greek yogurt for any plant-based yogurt and skip the collagen peptides!
High-Protein Peanut Butter & Strawberry Yogurt Bark
Ingredients
- 3 cups Greek yogurt
- 1/2 cup maple syrup
- 3 scoops collagen peptides optional
- 2 cups chopped strawberries plus extra for topping
- 1/2 cup creamy peanut butter
- 1 teaspoon melted coconut oil
Instructions
- Start by mixing together the yogurt, maple syrup, collagen peptides (if using), and chopped strawberries in a bowl.
- Spread this mixture onto a lined baking sheet.
- Then, combine the peanut butter with melted coconut oil and spread it over the yogurt mixture.
- Create swirls with the back of a knife or a toothpick.
- Freeze for at least 8 hours or overnight. The next day, break it into pieces and enjoy!
- Remember to store it in a covered container in the FREEZER!
