Garlic Parmesan Chicken Skewers

Ingredients
For the chicken skewers:
- 1.5 pounds of boneless skinless chicken thighs, cut into small pieces
- 1 to 2 tablespoons of olive or avocado oil
- 1/2 tablespoon of yellow mustard or 1 teaspoon of dried mustard powder
- 1 1/2 teaspoons of lemon pepper
- 1 1/2 teaspoons of paprika
- 1 1/2 teaspoons of Italian seasoning
- 1 teaspoon of salt
- 1 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/4 teaspoon of black pepper
For the garlic butter:
- 1/2 cup of unsalted butter melted (try Challenge Unsalted Butter)
- 2 tablespoons of finely chopped parsley
- 1 tablespoon of minced garlic
- 3 tablespoons of grated parmesan cheese
- 1/2 to 1 teaspoon of salt to taste
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried oregano
Instructions
- Combine melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano in a small bowl.
- In a separate bowl, mix together the chicken with mustard, lemon pepper, paprika, Italian seasoning, salt, garlic powder, onion powder, and black pepper until well combined.
- Thread the marinated chicken pieces onto skewers. If you’re using wooden skewers, soak them in water for 30 minutes to prevent burning. Aim for about 6 to 7 pieces per skewer.
- Place the skewers in the air fryer and cook at 425°F for 6 to 8 minutes. Flip the skewers and cook for another 6 to 8 minutes until both sides are golden.
- Remove from the air fryer and brush the skewers with the garlic butter.
- Serve warm with ranch dressing for dipping. Enjoy your delicious meal!
