In a small saucepan over medium heat, combine cranberries, maple syrup, orange juice, zest, vanilla, and cinnamon. Stir well, then bring it to a simmer. Reduce the heat to low and let it cook for 10-12 minutes until it thickens. Take it off the heat and let it cool completely.
While the cranberry mixture cools, grab a sharp knife and remove the rind from all three brie wheels. Toss them into a stand mixer and whip them on medium-high speed for 8-10 minutes, until the brie turns creamy and spreadable. (It’s almost like butter!)
Mix in the cranberry compote gently. Transfer it to a bowl and, if you like, garnish with honey, chopped pecans, orange zest, and some fresh cranberry slices. Serve it up with some crackers and enjoy the deliciousness!
