Vegan Monster Oatmeal Cookies

Ingredients
  

  • 1 1/4 cups old-fashioned oats
  • 3/4 cup oat flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 cup melted coconut oil
  • 1/2 cup granola butter
  • 1/4 cup maple syrup
  • 1/3 cup applesauce
  • 1 tsp vanilla extract
  • 1/2 cup vegan chocolate chips
  • 1/2 cup chocolate hard shell candies

Instructions
 

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a medium bowl, mix together old-fashioned oats, oat flour, cinnamon, salt, and baking powder. Set aside.
  • In another bowl, combine melted coconut oil, granola butter, maple syrup, applesauce, and vanilla extract. Then, add the wet ingredients to the dry mixture and mix until well combined.
  • Fold in the vegan chocolate chips and hard candies.
  • Using a double cookie scoop, place dough onto the baking sheet. Lightly flatten each cookie with your palm as they won’t spread much during baking.
  • Bake for 12-15 minutes.
  • Once baked, let the cookies cool for 5 minutes before transferring them to a cooling rack or plate.
  • Enjoy these delightful cookies!

Notes

Store the cookies in an airtight container on the counter and enjoy them within 4-5 days.
