Vegan Gâteau Invisible (Invisible Apple Cake)
Ingredients
Cake:
- 6-7 medium apples Granny Smith, Honeycrisp, or your favorite variety
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 cup unsweetened almond milk or other plant-based milk
- 1/4 cup dairy-free yogurt
- 1/4 cup melted coconut oil or vegetable oil
- 1 tsp vanilla extract
- 1 tsp ground cinnamon optional
- Powdered sugar for dusting optional
Instructions
Prepare the Apples:
- Preheat your oven to 350°F (175°C).
- Grease and line an 8-inch round cake pan with parchment paper.
- Peel the apples, then use a mandolin to slice them very thinly (about 1/8-inch thick). Set aside.
Prepare the Batter:
- In a large bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt.
- In another bowl, mix the unsweetened almond milk, dairy-free yogurt, melted coconut oil, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be smooth and slightly thick.
Combine Apples and Batter:
- Add the thinly sliced apples to the batter, gently folding them in until all the apple slices are well-coated with batter.
Assemble the Cake:
- Pour the apple and batter mixture into the prepared cake pan, spreading it out evenly and pressing down to ensure the apples are well-packed.
- Sprinkle the top with ground cinnamon, if using.
Bake the Cake:
- Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
Serve:
- Dust the top of the cake with powdered sugar before serving, if desired.
