Lightly spray a pan over medium heat. Add the frozen scallion pancake and let it cook for 1-2 minutes until golden brown.
Flip the pancake to the other side and quickly remove it from the pan.
In a bowl, whisk together the eggs with salt and pepper.
Spray the pan again and pour in the egg mixture.
Place the cooked scallion pancake on top of the eggs, golden brown side facing down.
Once the eggs have set, flip the pancake to the other side and add your desired toppings.
