Seasoned Beef
- 1 pound ground beef (85% lean)
- 1 teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon pepper
Chipotle Sour Cream
- 1 cup sour cream
- 1 tablespoon chipotle hot sauce
- ¼ teaspoon cayenne pepper
Other Ingredients
- 1 cup cooked Spanish rice (we used pre-cooked)
- 3 cups shredded cheddar jack cheese (divided)
- 1 cup red tortilla strips (store-bought)
- 2–3 tablespoons olive oil
- 4 extra-large burrito tortillas
Instructions
- Cook the seasoned beef: In a large skillet over medium heat, cook the ground beef until fully browned, about 5-7 minutes. Season with garlic powder, chili powder, salt, and pepper. Set aside.
- Prepare the chipotle sour cream: Mix sour cream, chipotle hot sauce, and cayenne pepper in a bowl. Set aside.
- Assemble the burritos: In a large bowl, combine ¼ pound of cooked beef, ¼ cup chipotle sour cream, ¼ cup rice, ½ cup cheese, and ¼ cup tortilla strips. Fill each tortilla with the mixture, folding in the sides and rolling into a burrito.
- Cook the burritos: Heat olive oil in the skillet over medium-high heat. Place a line of cheese in the center of the skillet and place a burrito on top. Press down with a heavy skillet and cook for 3-4 minutes until the cheese melts and browns. Flip and cook for another 2-3 minutes until browned.
- Repeat for remaining burritos. Let them rest for 1 minute before serving.
Notes
- For the best melting, mix all ingredients before wrapping.
- XL tortillas are recommended for ample filling space. Enjoy layered or mixed—it’s delicious either way!
