Assemble the burritos: In a large bowl, combine ¼ pound of cooked beef, ¼ cup chipotle sour cream, ¼ cup rice, ½ cup cheese, and ¼ cup tortilla strips. Fill each tortilla with the mixture, folding in the sides and rolling into a burrito.
Cook the burritos: Heat olive oil in the skillet over medium-high heat. Place a line of cheese in the center of the skillet and place a burrito on top. Press down with a heavy skillet and cook for 3-4 minutes until the cheese melts and browns. Flip and cook for another 2-3 minutes until browned.
