Strawberry Cheesecake Overnight Oats

Ingredients

  • 1 cup rolled oats
  • 1 cup diced strawberries
  • 1 tablespoon chia seeds
  • Pinch of salt
  • 1 cup unsweetened almond milk
  • 1/2 cup plain nonfat Greek yogurt
  • 1.5 tablespoons honey or more, to taste
  • 1 teaspoon vanilla extract

**Optional toppings:**

  • Crushed graham crackers
  • Strawberry jam
  • Honey
  • Fresh strawberries

Instructions

  • In a high-speed food processor or blender, puree the strawberries, almond milk, Greek yogurt, honey, and vanilla until smooth.
  • Transfer the mixture into a large container and add the rolled oats, chia seeds, and salt. Stir to combine.
  • Cover the container and refrigerate for at least 2 hours or preferably overnight to allow the oats to thicken.
  • When ready to eat, add more almond milk if desired, and top with crushed graham crackers, strawberry jam, fresh strawberries, and a drizzle of honey.

Notes

  • This recipe can be doubled or tripled easily.
  • Store the overnight oats in the fridge for up to 3-4 days.
  • Adjust the thickness of the oats by adding a splash of almond milk before serving, according to your preference.
