Strawberry Cheesecake Overnight Oats

Ingredients
- 1 cup rolled oats
- 1 cup diced strawberries
- 1 tablespoon chia seeds
- Pinch of salt
- 1 cup unsweetened almond milk
- 1/2 cup plain nonfat Greek yogurt
- 1.5 tablespoons honey or more, to taste
- 1 teaspoon vanilla extract
**Optional toppings:**
- Crushed graham crackers
- Strawberry jam
- Honey
- Fresh strawberries
Instructions
- In a high-speed food processor or blender, puree the strawberries, almond milk, Greek yogurt, honey, and vanilla until smooth.
- Transfer the mixture into a large container and add the rolled oats, chia seeds, and salt. Stir to combine.
- Cover the container and refrigerate for at least 2 hours or preferably overnight to allow the oats to thicken.
- When ready to eat, add more almond milk if desired, and top with crushed graham crackers, strawberry jam, fresh strawberries, and a drizzle of honey.
Notes
- This recipe can be doubled or tripled easily.
- Store the overnight oats in the fridge for up to 3-4 days.
- Adjust the thickness of the oats by adding a splash of almond milk before serving, according to your preference.
