In a high-speed food processor or blender, puree the strawberries, almond milk, Greek yogurt, honey, and vanilla until smooth.
Transfer the mixture into a large container and add the rolled oats, chia seeds, and salt. Stir to combine.
Cover the container and refrigerate for at least 2 hours or preferably overnight to allow the oats to thicken.
When ready to eat, add more almond milk if desired, and top with crushed graham crackers, strawberry jam, fresh strawberries, and a drizzle of honey.
