Ingredients

  • 2 pounds about 8 pieces boneless and skinless chicken thighs
  • 1/3 cup soy paste
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup honey
  • 4 tablespoons sriracha (adjust to taste)
  • 1 tablespoon oyster sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons ginger
  • 6 cloves garlic (minced)
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons cornstarch + 1/4 cup water
  • 16 ounces lo mein noodles (cooked as per package instructions)
  • Optional: sesame seeds and scallions for garnish


Instructions

  1. Place the chicken thighs in the slow cooker and add all the ingredients (except noodles and cornstarch).
  2. In a separate bowl, mix the cornstarch and water until smooth. Pour it into the slow cooker.
  3. Cover and cook on high for 3 hours.
  4. While the chicken cooks, prepare the noodles according to the package instructions. Set them aside.
  5. Shred the chicken and mix everything well.
  6. Stir in the noodles and toss until coated.
  7. Add sesame seeds and scallions on top if you like. Serve it up while it’s warm!
  8. Store any leftovers in the fridge for 3-4 days.
