  • 1/2 cup Rolled Oats (for oat flour or 1/3 cup + 1 tablespoon pre-made oat flour)
  • 2 tablespoons Brown Sugar (or coconut sugar)
  • 1/4 teaspoon Baking Powder
  • 1 tablespoon Cold Butter (cubed)
  • 2-3 tablespoons Milk of choice
  • 3 tablespoons Peaches (chopped)
  • 1 tablespoon Walnuts (chopped)


Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. If making oat flour from scratch, blend rolled oats in a blender or food processor until fine.
  3. In a bowl, mix oat flour with cold butter, baking powder, and brown sugar until crumbly. Add milk and mix until a thick dough forms.
  4. Fold in chopped peaches and walnuts.
  5. Shape the dough into a round scone and place it on the baking sheet.
  6. Sprinkle with brown sugar and bake for 18-20 minutes until golden brown.
