For the cinnamon roll:

  • 1/2 banana (mashed until smooth)
  • 1/2 cup self-rising flour
  • 2 tablespoons yogurt of your choice
  • 1/2 teaspoon vanilla extract (optional)

For the filling:

  • 1 tablespoon butter (or vegan butter, melted)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon

For the icing:

  • 1/4 cup powdered sugar
  • 1 teaspoon water


Instructions

  1. Start by mashing the banana until it’s smooth like a puree. Then, add in the flour, yogurt, and vanilla. If the dough is too sticky, gradually add more flour until it forms a ball. Transfer the dough to a floured surface.
  2. Use a rolling pin to gently roll out the dough. Be careful not to press too hard.
  3. Prepare the filling by mixing together the melted butter, brown sugar, and cinnamon. Spread this mixture evenly over the rolled-out dough.
  4. Cut the dough into two strips, then carefully roll each strip into a spiral shape.
  5. Place the rolled dough into a greased ramekin or mug.
  6. Bake at 350°F for about 15 minutes until the cinnamon roll is golden brown.
  7. While it’s baking, mix together the powdered sugar and water to make the icing.
  8. Once the cinnamon roll is done baking, drizzle the icing over the top.
