  • 1 pound cottage cheese (We used Good Culture)
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil

**For the Marinated Tomatoes:**

  • 2 cups cherry tomatoes (cut into quarters)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: pita chips and crostini for serving


Instructions

  1. Blend cottage cheese, feta, and olive oil in a food processor until velvety smooth. Set aside.
  2. In another bowl, mix tomatoes, parsley, basil, olive oil, salt, and pepper. Let it sit for 15 minutes.
  3. Spoon the luscious cottage cheese blend onto a low bowl or plate. Crown it with the marinated tomatoes.
  4. Dunk in with pita chips or crostini if you fancy.
  5. Keep the cottage cheese mix and tomatoes in separate containers in the fridge, and they’ll stay fresh for 2-3 days.
