Piña Colada Rolls

Ingredients

For the Dough:

  • 1 ¼ cups of whole milk
  • 2 ¼ teaspoons of active dry yeast
  • 1 teaspoon of granulated sugar to bloom the yeast
  • 4 ¾ cups of all-purpose flour
  • 1 ½ teaspoons of salt
  • 2 tablespoons of granulated sugar
  • 2 eggs beaten
  • ½ cup of very softened unsalted butter
  • ½ tablespoon of vanilla extract

For the Pineapple Coconut Filling:

  • 2 cups of chopped fresh pineapple
  • 1 cup of brown sugar
  • ½ cup of very softened unsalted butter
  • ¼ cup of granulated sugar
  • ½ cup of sweetened condensed milk
  • 1 cup of shredded sweetened coconut flakes
  • 1 teaspoon of coconut extract
  • ¼ cup of heavy cream for pouring between the rolls

For the Pineapple Coconut Cream Cheese Frosting:

  • ¼ cup of softened unsalted butter
  • 4 oz of cold cream cheese
  • ¾ cup of powdered sugar
  • ¼ cup of sweetened condensed milk
  • 1 tablespoon of pineapple juice
  • ½ teaspoon of coconut extract

Instructions

For the Dough:

  • First, let’s bloom that yeast! Mix it with warm milk and sugar, then let it sit for 10 minutes.
  • Next, in a large bowl, whisk together flour, salt, and sugar.
  • Add beaten eggs, vanilla, and softened butter to the dry ingredients, and mix well.
  • Pour in the yeast mixture and knead until you have a smooth dough.
  • Let the dough rise until doubled in size.

For the Pineapple Coconut Filling:

  • Simmer chopped pineapple and brown sugar until thickened and candied.
  • Mix softened butter, sugar, condensed milk, coconut, and extract until creamy.
  • Add cooled pineapple to the mixture and combine.

Assembling and Baking:

  • Roll out the dough, spread the filling, and roll it up into a log.
  • Cut into rolls and place in a greased dish.
  • Pour cream between the rolls and let them rise again.
  • Bake until golden brown.
  • For the Pineapple Coconut Cream Cheese Frosting:
  • Beat softened butter until fluffy, then add cream cheese and mix.
  • Gradually add powdered sugar until smooth.
  • Mix in condensed milk, pineapple juice, and coconut extract until fluffy.
  • Once the rolls are cool, slather them with frosting and get ready to savor a taste of the tropics!
