Instructions

For the Dough:

  2. Next, in a large bowl, whisk together flour, salt, and sugar.
  3. Add beaten eggs, vanilla, and softened butter to the dry ingredients, and mix well.
  4. Pour in the yeast mixture and knead until you have a smooth dough.
  5. Let the dough rise until doubled in size.

For the Pineapple Coconut Filling:

  1. Simmer chopped pineapple and brown sugar until thickened and candied.
  2. Mix softened butter, sugar, condensed milk, coconut, and extract until creamy.
  3. Add cooled pineapple to the mixture and combine.

Assembling and Baking:

  1. Roll out the dough, spread the filling, and roll it up into a log.
  2. Cut into rolls and place in a greased dish.
  3. Pour cream between the rolls and let them rise again.
  4. Bake until golden brown.
  5. For the Pineapple Coconut Cream Cheese Frosting:
  6. Beat softened butter until fluffy, then add cream cheese and mix.
  7. Gradually add powdered sugar until smooth.

  9. Once the rolls are cool, slather them with frosting and get ready to savor a taste of the tropics!
