Description

These Philly Cheesesteak Sloppy Joes combine savory seasoned beef, sautéed vegetables, and melted provolone on toasted brioche buns for a fast, comforting dinner that feels extra satisfying without taking much effort.

Ingredients

Scale
  • 450g lean ground beef
  • 30g butter
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 230g brown mushrooms, finely minced or chopped
  • 30g ketchup
  • 15g Worcestershire sauce
  • 3g kosher salt
  • 3g ground black pepper
  • 8g cornstarch
  • 240ml beef broth
  • 225g provolone cheese, chopped or shredded
  • 6 brioche hamburger buns, buttered and toasted

Instructions

  1. Place a large skillet over medium-high heat and add the ground beef. Let it sit undisturbed for about a minute so the bottom can brown properly before you start breaking it apart. Once you see good color, stir and continue cooking until the beef is fully browned and no longer pink. Transfer the beef to a plate and set it aside.
  2. In the same skillet, lower the heat slightly if needed and add the butter. Once it melts, stir in the diced onion, green bell pepper, and mushrooms. Cook the vegetables until they soften and begin to brown, stirring occasionally so they do not stick. Let them develop color, because that is where the flavor really deepens.
  3. In a small bowl, whisk together the beef broth, cornstarch, ketchup, Worcestershire sauce, kosher salt, and black pepper until the mixture looks smooth and fully combined. This will become the sauce that ties the filling together.
  4. Pour the sauce mixture into the skillet with the vegetables. Stir well, making sure everything gets coated. Bring the pan to a gentle simmer and let it cook for about 3 to 5 minutes, or until the sauce thickens enough to lightly coat the vegetables.
  5. Return the browned beef to the skillet and stir it into the thickened mixture. Mix thoroughly so the beef, vegetables, and sauce all come together in one even filling.
  6. Turn off the heat. Add the provolone cheese to the skillet and stir until it melts completely into the beef mixture. The filling should turn creamy, rich, and glossy.
  7. While the filling rests, butter the brioche buns and toast them in a skillet or under a broiler until golden brown. The toasted surface helps hold up to the juicy filling and adds a nice contrast in texture.
  8. Spoon the cheesy beef mixture generously onto the toasted buns. Serve immediately while everything is hot and melty.

Notes

  • These Philly Cheesesteak Sloppy Joes are a great make-ahead option because the filling reheats well.
  • Keep the buns separate until serving so they stay toasted and do not soften too quickly.
  • For extra texture, you can add more mushrooms or peppers, depending on what your crowd likes best.
