Peanut Butter Energy Balls

Ingredients
- 1 cup rolled oats
- 1/2 cup lightly salted peanuts or unsalted if you prefer
- 2 tablespoons honey
- 1/2 cup melted creamy peanut butter
- 1 tablespoon melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 1/4 teaspoon salt if using unsalted peanuts
- 1 tablespoon chia seeds optional
Instructions
- In a blender, grind oats and peanuts until they resemble flour.
- Transfer the mixture to a bowl and add peanut butter, honey, melted coconut oil, and salt (if using). Mix until it forms a “dough.”
- Add chocolate chips and mix until they are evenly distributed.
- Use a small ice cream scoop to form 1-inch balls. Refrigerate for 30 minutes.
Notes
*Tip: After blending oats and peanuts, you can use a food processor for the rest of the ingredients (excluding chocolate chips). Pulse until smooth and then stir in the chocolate chips. This makes the process even easier!*
