1/2cupmelted creamy peanut butter
1tablespoonmelted coconut oil
1teaspoonvanilla extract
1/2cupmini chocolate chips
1/4teaspoonsaltif using unsalted peanuts
1tablespoonchia seedsoptional
Instructions
In a blender, grind oats and peanuts until they resemble flour.
Transfer the mixture to a bowl and add peanut butter, honey, melted coconut oil, and salt (if using). Mix until it forms a "dough."
Add chocolate chips and mix until they are evenly distributed.
Use a small ice cream scoop to form 1-inch balls. Refrigerate for 30 minutes.
Notes
*Tip: After blending oats and peanuts, you can use a food processor for the rest of the ingredients (excluding chocolate chips). Pulse until smooth and then stir in the chocolate chips. This makes the process even easier!*
