Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup lightly salted peanuts or unsalted if you prefer
  • 2 tablespoons honey
  • 1/2 cup melted creamy peanut butter
  • 1 tablespoon melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/4 teaspoon salt (if using unsalted peanuts)
  • 1 tablespoon chia seeds (optional)


Instructions

  1. In a blender, grind oats and peanuts until they resemble flour.
  2. Transfer the mixture to a bowl and add peanut butter, honey, melted coconut oil, and salt (if using). Mix until it forms a “dough.”
  3. Add chocolate chips and mix until they are evenly distributed.
  4. Use a small ice cream scoop to form 1-inch balls. Refrigerate for 30 minutes.

Notes

*Tip: After blending oats and peanuts, you can use a food processor for the rest of the ingredients (excluding chocolate chips). Pulse until smooth and then stir in the chocolate chips. This makes the process even easier!*
