Peanut Butter Cup Oatmeal Bars

Ingredients
- 1 cup all-natural creamy peanut butter
- ½ cup honey
- 2 cups quick-cooking oats
- Water as needed
- ¾ cup semi-sweet chocolate chips
- Coarse sea salt for topping
Instructions
- Line an 8×8-inch pan with parchment paper.
- Heat peanut butter and honey over medium heat, stirring occasionally until melted and glossy.
- Remove from heat and stir in oats until well coated. Add water as needed until it reaches a cookie dough consistency.
- Press the oat mixture firmly into the lined pan and set aside.
- In a microwave-safe bowl, heat chocolate chips in 20-second intervals, stirring in between until melted and glossy.
- Pour melted chocolate over the oat layer, spreading it evenly. Sprinkle with coarse sea salt.
- Freeze the pan for at least 20 minutes before cutting into squares.
- Enjoy immediately or store the bars in a freezer-safe container.
Notes
- Any nut butter works well instead of peanut butter.
- For added crunch, consider mixing in ¼ cup chopped salted peanuts or ½ cup crushed Chex cereal.
- Old-fashioned rolled oats can be used, but the bars will have a chewier texture.
- Maple syrup can be used as a substitute for honey.
- Feel free to cut the bars into your preferred size.
