Peanut Butter Cup Oatmeal Bars

Ingredients

  • 1 cup all-natural creamy peanut butter
  • ½ cup honey
  • 2 cups quick-cooking oats
  • Water as needed
  • ¾ cup semi-sweet chocolate chips
  • Coarse sea salt for topping

Instructions

  • Line an 8×8-inch pan with parchment paper.
  • Heat peanut butter and honey over medium heat, stirring occasionally until melted and glossy.
  • Remove from heat and stir in oats until well coated. Add water as needed until it reaches a cookie dough consistency.
  • Press the oat mixture firmly into the lined pan and set aside.
  • In a microwave-safe bowl, heat chocolate chips in 20-second intervals, stirring in between until melted and glossy.
  • Pour melted chocolate over the oat layer, spreading it evenly. Sprinkle with coarse sea salt.
  • Freeze the pan for at least 20 minutes before cutting into squares.
  • Enjoy immediately or store the bars in a freezer-safe container.

Notes

  • Any nut butter works well instead of peanut butter.
  • For added crunch, consider mixing in ¼ cup chopped salted peanuts or ½ cup crushed Chex cereal.
  • Old-fashioned rolled oats can be used, but the bars will have a chewier texture.
  • Maple syrup can be used as a substitute for honey.
  • Feel free to cut the bars into your preferred size.
