Ingredients

Scale
  • 1 cup rolled oats (quick-cooking oats work too)
  • 1 tablespoon chia seeds
  • 2 fresh peaches (pitted and diced)
  • ½ cup full-fat plain Greek yogurt
  • 1 cup oat milk (any kind of milk works)
  • ¼ cup heavy cream (or more oat milk)
  • 1.5 teaspoons vanilla extract
  • 2 tablespoons honey

Optional Toppings:

  • Whipped cream
  • Diced peaches

Instructions

  1. In a large mixing bowl, combine all the ingredients until well mixed.
  2. Cover the bowl and refrigerate for at least 2 hours or overnight.
  3. When ready to serve, enjoy the overnight oats as is for a thick consistency, or add ¼ cup of oat milk for a thinner texture. Top with whipped cream and extra peaches if desired.

Notes

  • If your overnight oats are too thick in the morning, simply add a splash more milk to reach your desired consistency.
  • Store the prepared oats in an airtight container in the refrigerator for up to 5 days, making them a convenient option for meal prep.
