Peach Filling

  • 2 medium peaches (almost ripe)
  • 3 tbsp maple syrup
  • 1.5 tsp cinnamon
  • 3 tbsp guava jam

Crisp Topping

  • 1/2 cup organic oat flour
  • 1/3 cup organic old-fashioned oats
  • 2 tbsp ground flaxseed
  • 2 tbsp coconut oil (melted)
  • 1 tbsp maple syrup


Instructions

  1. Preheat your oven to 350°F. Dice the peaches and place them in a baking dish.
  2. Top the peaches with guava jam, maple syrup, and cinnamon. Mix well and set aside.
  3. In a medium bowl, combine oat flour, oats, ground flaxseed, melted coconut oil, and maple syrup.
  4. Evenly distribute the crumble mixture over the peaches in the baking dish.
  5. Bake for 30 minutes until golden brown and bubbly.
  6. Allow it to cool slightly before serving. Enjoy it plain or with your favorite ice cream or yogurt!

Notes

  • Choose peaches that are just about ripe for the best results.
  • Easily make oat flour by blending oats until finely ground.
  • Fresh guava or guava jam both work well in this recipe.
