Ingredients

Peach Filling

  • 2 medium peaches almost ripe
  • 3 tbsp maple syrup
  • 1.5 tsp cinnamon
  • 3 tbsp guava jam

Crisp Topping

  • 1/2 cup organic oat flour
  • 1/3 cup organic old-fashioned oats
  • 2 tbsp ground flaxseed
  • 2 tbsp coconut oil melted
  • 1 tbsp maple syrup

Instructions

  • Preheat your oven to 350°F. Dice the peaches and place them in a baking dish.
  • Top the peaches with guava jam, maple syrup, and cinnamon. Mix well and set aside.
  • In a medium bowl, combine oat flour, oats, ground flaxseed, melted coconut oil, and maple syrup.
  • Evenly distribute the crumble mixture over the peaches in the baking dish.
  • Bake for 30 minutes until golden brown and bubbly.
  • Allow it to cool slightly before serving. Enjoy it plain or with your favorite ice cream or yogurt!

Notes

  • Choose peaches that are just about ripe for the best results.
  • Easily make oat flour by blending oats until finely ground.
  • Fresh guava or guava jam both work well in this recipe.
