Peach and Blueberry Baked Oatmeal

Ingredients

Scale
  • 2 cups of old-fashioned rolled oats
  • 2 cups of unsweetened almond milk
  • 1 cup of fresh blueberries
  • 1 large fresh peach
  • 1 medium egg
  • 1/4 cup of maple syrup (adjust to your taste)
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of kosher salt
  • 1 teaspoon of vanilla extract


Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Dice a large peach and rinse the blueberries. Combine all the dry ingredients in a 13×9 oven-safe baking dish (*check the note for other options*).
  3. Crack the egg into the baking dish, then add the milk, maple syrup, and vanilla extract.
  4. Stir everything together with a fork.
  5. Finally, gently fold in the peach slices and blueberries.
  6. Bake in the oven for 20-25 minutes.
  7. Serve it up warm!

Notes

For thinner slices, use a 13×9 baking dish. For thicker pieces, opt for an 11×7 baking pan.
