Parmesan Potatoes

Check out these super easy potatoes that make the perfect side dish! They’re super buttery, extra crispy, and absolutely delicious!

Parmesan Potatoes

Ingredients
  

  • 1.5 pounds of baby potatoes halved
  • 1/4 cup of melted butter
  • 2 grated garlic cloves
  • 1/3 cup of grated parmesan
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 1/4 cup of parsley

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit.
  • Pour the melted butter into a 9 x 13-inch baking dish.
  • Mix in the parmesan cheese, grated garlic, salt, pepper, paprika, and parsley with the butter.
  • Spread the mixture thinly in the baking dish.
  • Score the potatoes about 1/4-inch-deep in a diamond pattern (crosshatch).
  • Place the cut side of each potato in the pan.
  • Bake until the potatoes are tender and the parmesan creates a golden crust on the bottom (around 20-25 minutes).
  • Allow the potatoes to stand for 5 minutes before using a spatula to release them from the pan.

Notes

  • For extra crispiness, soak the potatoes for 30 minutes to 24 hours before baking.
  • Use freshly grated parmesan for the freshest flavor.
