Paratha Pockets

Ingredients
- 4 parathas
- 4 large eggs
- Salt and pepper
- Avocado or olive oil
- Cheese slices
- Cooked beef or turkey bacon
Instructions
- Whisk eggs with salt and pepper.
- Heat oil in a non-stick pan over low heat. Pour in eggs, stir slowly until set, then set aside.
- Fry bacon until crispy, adding brown sugar for sweetness if desired. Remove from pan.
- Heat a pan over medium heat. Add a bit of oil.
- Place a paratha in the pan. Add eggs, cheese, and bacon in the center.
- Cover with another paratha and press edges to seal.
- Cook until golden and crispy, then flip and cook the other side.
- Reduce heat, cover, and let it cook through.
- Remove from heat, cut in half, and enjoy warm!
