One Pot Parmesan Pasta

Ingredients

  • 4 cups low-sodium chicken stock
  • 12 oz spaghetti noodles
  • 1 small onion (thinly sliced)
  • 14.5 oz can of Rotel or petite diced tomatoes
  • 1 cup fresh basil
  • 3 cloves garlic (minced)
  • Juice and zest of one lemon
  • 3 tbsp olive oil
  • 1/2 tbsp sea salt
  • 1 tsp fresh ground black pepper
  • 1/4 cup heavy cream
  • 1 cup shredded parmesan cheese
  • Extra basil for garnish


Instructions

  1. Grab a deep skillet or a heavy-bottom pot. Toss in the pasta, tomatoes, onions, basil, garlic, lemon juice, and zest.
  2. Drizzle the olive oil, add salt and pepper.
  3. Pour in the chicken stock and give everything a good stir.
  4. Crank up the heat to medium-high and bring it to a boil. Cover and let it cook for 8-10 minutes. Remember to stir halfway through to keep the pasta from sticking together. Cover and cook for an additional 2-3 minutes or until the pasta is just right.
  5. Stir in the heavy cream and parmesan cheese. Let it sit for a few minutes, allowing the sauce to thicken up.
